The most versatile vegetable in the world, especially during the holidays, is the sweet potato. There are endless ways to prepare them, as well as endless reasons why to incorporate them into your meals, so be sure to add them to your shopping list!

Sweet potatoes are rich in complex carbohydrates, and high in fiber, beta-carotene, and vitamins. —One medium-sized cooked sweet potato comes in a little over 100 calories and aa boat load of fiber. And sweet potatoes are a powerhouse recovery food. Its carotenoids help aid cell repair, the starchy carbs help restock energy stores, and fiber will keep you full.

Other major benefits are:

  • Cardiac health
  • Immune boost
  • Excellent for digestion

There is even research that says they are good accompaniment to cancer treatment.

They can be higher on the glycemic scale, especially if roasted, so it is better to boil them. Be mindful of your portion size! 1/2 for women, but you can add more if you are a regular exerciser.
